How should cake balls be stored?

This really depends on environmental conditions. During cool/cold months (October thru April in the Northeast) they can safely be stored at room temperature.

 

If the weather is warm (higher than mid 70's), they should be kept in an air-conditioned (cool and dry) room or refrigerated in an air-tight container to maintain a nice appearance and texture. If not, they can become a bit sticky or melty to the touch.

 

It is not usually recommended to refrigerate chocolate because taking it from a cold environment to a warm one will result in condensation on the surface which can negatively affect its appearance and feel. If refrigeration is necessary, it is helpful if the room it is served in is air-conditioned and cool (low 70's or below).

 

How long do cake balls keep?

Unrefrigerated they should be good for 3 to 4 days (if room temperature is low 70's or cooler). If kept in the refrigerator they should be good for about 7 to 10 days.

 

How should cake balls be served?

During hot and humid weather, to ensure that they don't develop condensation or become too soft or sticky, enjoy them in an air-conditioned (cool and dry) environment if possible. If they have been refrigerated, my recommendation is to take them out about 30 to 45 minutes before eating. This allows the chocolate coating to soften a bit which makes them nicer to eat.

 

At what temperature does chocolate melt?

The melting point of chocolate is between 86° F. (30° C) and 90° F. (32° C), lower than body temperature.

  • German Chocolate - contains pecans

  • Irish Cream - contains pecans

  • Butter Crunch - no nuts are added, but the English Toffee package says "contains almonds"
